The south-facing slopes of the hillsides reserved for the appellation display a combination of light, stony clay-limestone soils.
Climate
The natural barriers surrounding the appellation zone on three sides limit maritime influences and give it a climate between the ocean and the Mediterranean.
Grape varieties
Crémant de Limoux: Chardonnay (30% min.) Chenin (10% min.), Chardonnay + Chenin (90% max.). Accessory grape varieties: Mauzac + Pinot Noir (40% max.), Mauzac (20% max.)
Limoux blanc (still wine): Mauzac, Chardonnay, Chenin.
