Wine description
- From the Chardonnay plot (500 m), fully south-facing, overlooking the mountains
- The estate has been certified since the 2018 vintage AB ( organic wine ) and DEMETER (biodynamic farming).
- The quintessence of cultivating a noble grape variety: Chardonnay on a unique terroir in the Languedoc (a blend of mountain and Mediterranean climate)
- Its fruity aromas (pineapple, vine peach, apricot, almond) and floral notes (white flowers), coupled with complex and subtle toasty notes.

Winemaking and ageing
The vines receive attentive care and frequent manual intervention (pruning, debudding, leaf thinning, green harvesting, hand-sorted harvesting), in line with environmentally friendly practices. The vineyard is trained on espaliers to create an optimal leaf canopy for grape ripening. The vines are planted at a relatively high density of 5,000 to 6,000 vines/ha, allowing optimal vigour management. Vineyard care aims to obtain a healthy crop with moderate yields, bringing out the quintessence of the grapes' qualitative potential. The harvest date is only set once the grapes have reached optimal ripeness. The grapes are hand-harvested and undergo low-pressure pneumatic pressing as whole bunches as soon as they reach the winery. After a light static cold settling, the musts begin alcoholic fermentation in vats and are then quickly racked midway through fermentation into new oak barrels. Malolactic fermentations are carried out according to the characteristics of the vintage. Barrel ageing lasts 7 to 8 months (until the spring equinox) with regular stirring (bâtonnage). After light fining, the wine is bottled unfiltered. The wine is aged in bottle for several months before release.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.
The alcohol content (% vol.) varies by cuvée and vintage; it is listed in the product’s technical data sheet, below the description.
The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

As a general rule: 8-10°C for rosés and light whites, 10-12°C for more complex whites, 16-18°C for reds. The most suitable serving temperature for this cuvée is also indicated on its technical sheet.
This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
