Wine description
This cuvée comes exclusively from terroirs situated in the oceanic climates of Limoux. Code Rouge is an ode to excellence and a tribute to the Premier Brut du Monde crafted by the Monks of the Abbey of Saint Hilaire near Limoux. A blanc de blancs made from Chardonnay, Chenin and Mauzac, it offers an exceptional expression of the high-altitude terroir where it was born, full of finesse and elegance. This Crémant carries all the hallmarks of Gérard Bertrand wines: the emblematic red colour of its bottle and the Alpha and Omega symbols, evoking the endlessly renewed cycle of nature that inspired its designation as Brut Éternel.

Winemaking and ageing
The harvest is manual and the grapes are transported in harvest crates. Direct pressing is carried out using a pneumatic press, which allows the press juices to be eliminated through extractions of 30 to 40% without re-pressing. A very careful settling of the juices is carried out, followed by alcoholic fermentation at a controlled temperature of 18°C. Malolactic fermentation may be carried out depending on the vintage. A very precise blending of the various terroirs and grape varieties is performed, with bottling taking place in early January to encourage the development of bubbles.
The wine is aged on laths for a minimum of 12 months.
Tasting note
The colour is very pale, almost crystalline with fine
bubbles. The nose is floral and presents notes of pear,
citrus and fresh fruits. The palate is fresh and mineral. Code Rouge is a fine, elegant and refined blanc de blancs.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

As a general rule: 8-10°C for rosés and light whites, 10-12°C for more complex whites, 16-18°C for reds. The most suitable serving temperature for this cuvée is also indicated on its technical sheet.
This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
