Wine description
The earliest traces of the Occitan language date back to around the year 940 in literary texts such as the poem "La Passion de Clermont". It subsequently became an Occitan language, a European cultural language carried by the Troubadour movement in the Middle Ages.
Winemaking and ageing
The grapes are harvested at perfect ripeness to express the optimal potential of the grape variety. A meticulous sorting of the harvest is carried out at picking and upon reception of the grapes. The grapes are destemmed and cooled to 8°C. A skin maceration of 12 to 24 hours is then carried out in order to extract the aromatic compounds from the skins and pulp. The grapes are then sent to the press to extract the must. Particular attention is paid to the pressing so as to retain only the finest first-run juices. The juices are then settled to a greater or lesser degree depending on the desired aromatic profile. Fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. The distinctive feature of this grape variety lies in its great aromatic richness and its very stable aromas with regard to oxidative phenomena. Finally, after a light fining, bottling takes place fairly early in order to preserve the fresh and fruity character of the wines.
Tasting note
Ripe pear comes through on the nose, accompanied by subtle hints of honeysuckle. On the palate, its rich and generous texture caresses the palate, showcasing intense flavours of ripe pear, peach, apricot, orange blossom, citrus and a delicate touch of oak. The finish is harmoniously balanced, leaving a gentle mineral impression that lingers pleasantly on the palate.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
