Wine description
The first traces of the Occitan language date back to around 940 AD in literary texts such as the poem "La Passion de Clermont". It subsequently became an Occitan language, a European cultural vehicle carried by the Troubadour movement in the Middle Ages.
Winemaking and ageing
Sauvignon is a very early-ripening grape variety that requires a precise harvest date, determined by berry tastings before the harvest, in order to achieve the full typical intensity of the variety. The grapes are harvested at night to preserve the freshness of the fruit. Upon arrival at the winery, the berries are gently pressed. A portion of the wine is vinified and then aged in 225-litre Bordeaux barrels for approximately 4 months, while the remainder is vinified in temperature-controlled stainless steel tanks at low temperature to preserve the freshness and integrity of the aromas. Finally, after a light fining, bottling takes place early in order to preserve the fresh and fruity character of the wines.
Tasting note
To the eye, its pale yellow hue evokes freshness. On the nose, wafts of pineapple, lime and a hint of grapefruit. On the palate, the combination of juicy tropical fruits and citrus notes is balanced by a rich, round texture, offering a full and satisfying mouthfeel. The lingering finish leaves an impression of elegance and freshness.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
