Wine description
The earliest traces of the Occitan language date back to around the year 940, in literary texts such as the poem "La Passion de Clermont". It subsequently became an Occitan language, a European cultural vehicle carried by the Troubadour movement in the Middle Ages.
Winemaking and ageing
The grapes are harvested at night to preserve the freshness of the fruit. Upon arrival at the winery, the berries are gently pressed in a pneumatic press. After cold static settling, alcoholic fermentation begins in stainless steel vats at low temperature. A portion of the must is placed in barrels to complete fermentation. Malolactic fermentation is not carried out in order to preserve the wine's liveliness. After a light fining, the wine is bottled.
The colour is golden. This wine offers aromas of vanilla, fresh butter and toasted bread that seduce the nose. On the palate, a velvety texture envelops the mouth, revealing notes of juicy peach, roasted almond and crème brûlée. The lingering finish, supported by a subtle acidity, lends unparalleled elegance to this Chardonnay, making it a perfect choice for lovers of rich and balanced wines.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
