Wine description
Located in the heart of Languedoc in the South of France, Clos du Temple is born on the historic terroir of Cabrières, the cradle of rosé wines.
The terroir owes its singularity to its geological genesis.
The contact between schist, limestone, and the hilly relief gives rise to a complex network of underground water circulation, fostering an exceptional natural water supply for the vineyard and the emergence of a source of exceptionally pure water.
Its altitude of 150 metres, combined with its South – South-West exposure, contributes to the crafting of a perfectly balanced wine of great aromatic freshness. At Clos du Temple, we have chosen to cultivate the vines using Biodynamics and to use horses and mules in order to foster the connection between the mineral, the vegetal, the animal and the human.

Winemaking and ageing
The unique blend of 4 red grape varieties (GRENACHE, CINSAULT, SYRAH, MOURVÈDRE) and one white grape variety (VIOGNIER) gives this rosé all its singularity.
A perfect, full balance with great length, carried by a lovely freshness. As the winery is located in the heart of the vineyard, transport time is minimal. The finest free-run juices are then selected. Cold pressing (5°C) preserves the aromas and freshness and prevents the juice from colouring by locking in the natural pigments (anthocyanins). Before low-temperature fermentation, cold settling is carried out for 24 hours at a controlled temperature between 8 and 10°C without the addition of sulphur. Ageing takes place in new French oak barrels (oak from the Tronçais and Jupilles forests) for 6 to 8 months on fine lees with bâtonnage. The wines are blended on a fruit day, according to the biodynamic astral calendar, which is favourable for tasting
Tasting note
Clos du Temple is a very pale and sparkling rosé. Its nose reveals notes of ripe fruit (apricot, white peach), floral notes of rose and spicy aromas of green pepper. On the palate, the same scents are found, complemented by a delicate finish of blond tobacco. This wine is capable of ageing for many years.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.
The alcohol content (% vol.) varies by cuvée and vintage; it is listed in the product’s technical data sheet, below the description.
The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

Like almost all wines, our cuvées contain sulphites (naturally present during fermentation, sometimes added in small quantities as a preservative). Details (“no added sulphites”, level, etc.) are specified on this product’s technical data sheet and on the back label.

As a general rule: 8-10°C for rosés and light whites, 10-12°C for more complex whites, 16-18°C for reds. The most suitable serving temperature for this cuvée is also indicated on its technical sheet.
This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.

We do not produce dealcoholised wine. However, our range offers wines with lower alcohol content: So'Vive (naturally low-alcohol organic white wine), Le Chouchou (light red wine) and Cote des Roses Red Léger. The precise alcohol content of each cuvée is indicated on its product sheet.
