Upon arrival, the grapes are immediately cooled to 8°C and pressed, taking care to discard the press juices. The juices are cold-settled to encourage natural clarification of the musts and the elimination of oxidisable compounds by precipitation. Alcoholic fermentation is quickly initiated at regulated fermentation temperatures between 17 and 18°C. At the end of fermentation, the wine is racked so as to retain some fine lees, which will form the antioxidant base of the wines during their ageing before bottling.
